Eggplant Parmesan with a Twist

Looking for a quick and delicious meal to eat? Try this modern take on the classic Eggplant Parmesan dish. I was inspired to recreate this recipe after watching a YouTube video by Byron Talbott. He shares the best recipes and features different cooking series on his channel. Not to mention he posts the most drool-worthy eats on Instagram. Overall, I found this dish to be much lighter than the traditional Eggplant Parmesan. I really enjoyed the creaminess from the burrata and the hint of sweetness from the balsamic glaze. I opted to use a cinnoman pear balsamic vinegar from Old Town Oil. Be sure to visit their store if you live in the Chicago area. They also offer gift sets that make great hostess gifts!


* Add pine nuts and sprinkle some fresh Parmesan for an added garnish.
