Peanut Butter Banana "Ice Cream" with Toasted Coconut

Looking for a "guilt-free" frozen treat? 
This banana-based ice cream is easy to make and can be made into different flavors. Let's just say, I now have a reason to keep frozen bananas in the freezer at all times!

  • 4 ripe bananas
  • 2 tablespoons peanut butter
  • 1 teaspoon of pure vanilla extract
  • Coconut

  1. Peel the bananas and slice into 1/2 inch discs. Arrange the slices in a single layer on a large baking sheet and freeze for 1 to 2 hours.
  2. Meanwhile, spread desired amount of coconut on a small baking sheet and place in a 325 degree oven for 5-10 minutes. Set aside and let cool. 
  3. Next, place the banana slices in a food processor and puree until the mixture is creamy and smooth.
  4.  Add the peanut butter and vanilla. Mix to combine.
  5. Lastly, find your favorite dish and serve immediately for soft-serve ice cream consistency. Sprinkle toasted coconut for added garnish.
